MONTEITH’S WILD RECIPE COMPETITION WINNER
Congratulations to the winner of the 2011 Monteith's Wild Recipe competition, Jacquie Hills from Napier!
This recipe was chosen from a very strong list of contenders for its simplicity, accessibility, creativity and, of course, its success at combining beer and food.
"Jacquie's recipe is very simple and uses ingredients that are comparatively easy to find. Rissoles are something most Kiwi cooks are familiar with so it’s not a big leap to consider using duck as an alternative to the more common beef, chicken or pork. The method of preparation is also very easy and that makes it something many home cooks would consider attempting. Most of all, the pairing of the duck with Celtic is inspired. The duck brings out the sweetness in the beer while the astringency of the hops in the beer acts as counterpoint to the natural oiliness of the fat in the duck. It should also be noted that the chorizo adds spice seasoning to the dish and that too works well with sweetness that underpins Celtic. Lastly the cloves (need to be used in moderation) add complexity to the match and we believe expose a subtle quality in the Celtic that in other circumstances can easily go unnoticed." – Kerry Tyack
Jacquie and a guest will be making their way up to Auckland and will observe the MBWFC live ‘Cook Off’ final on the 8th August, enjoy a fantastic dinner at The Foodstore, receive over $1,000 of Le Creuset cookware and a selection of Monteith’s beer.

Q: What constitutes the term 'wild'?
A: There are four ways to make your dish meet the criteria of 'wild':
- The first is to source the wildest of LOCAL ingredients you can.
- The second is to take a more readily available ingredient such as venison or other game meats and prepare it in a 'wild' manner.
- The third way is to get wild in the way you prepare / garnish your dish.
- The fourth way is to use a combination of the above.
